Frequently asked questions
Which allergens must be on the menu?
The 14 major allergens of the EU Food Information Regulation: cereals containing gluten, crustaceans, eggs, fish, peanuts, soy, milk, tree nuts, celery, mustard, sesame, sulphur dioxide/sulphites, lupin and molluscs.
Must allergen labelling be on the menu itself?
Not necessarily. The information can be given in writing (e.g. on the menu) or verbally on request — verbally only if written documentation exists and guests are clearly told about it.
Are there fixed letters for allergens?
In Germany, no letters or numbers are prescribed. What matters is a clear legend — the tool creates it automatically.
